
Food culture
At Vestjyllands Højskole, we love food – and as a student, you’ll have the chance to step into the heart of the school: the kitchen, where once a week we prepare a meal for everyone on campus.
In the lessons, you’ll get hands-on experience with techniques such as frying, boiling, steaming, baking, sautéing, braising, pickling, and fermenting. You’ll also become confident in using and handling knives safely and effectively.
We’ll explore the cultural importance of food in our society and social relationships, and we’ll learn about food systems, labeling, and various food-related political issues such as food waste, meat substitutes, or other current topics.
We’ll begin by discussing which themes within gastronomy interest us as a group and what we’d like to explore. Perhaps you’re an international student who wants to share a taste of your home country’s food culture, or maybe your grandmother made the best dish ever—and you’d like to try recreating it.
Many of the ingredients we use come from the school’s own gardens and local producers, and throughout the course we’ll also visit local food producers to see where and how good ingredients are made.
