
Food culture
At Vestjyllands Højskole, we love food, and we grow a good portion of our own ingredients. Therefore, as a student you can gain access to the very heart of the school—the kitchen—where once a week we prepare a meal for the rest of the school.
In class, you will work with techniques such as frying, boiling, steaming, baking, sautéing, braising, pickling, and fermenting. In addition, you will gain better control and confidence in your knife skills.
We will explore the significance of food culture for our society and our social connections. We will learn about food systems, certification schemes, and discuss various food-political topics such as food waste and meat alternatives—or something entirely different that captures our interest.
We begin the course by talking about current topics within gastronomy and what we, as a group, would like to work on. Perhaps you are an international student who would like to share a taste of your own food culture with your fellow students, or perhaps your grandmother made the best dish ever, which you would like to try to recreate
